Alternative Thanksgiving Dishes/Recipes

I was emotionally scarred the last time the in-laws did a turkey free thanksgiving. I know that some do the spiral cut ham.....

My mom would do a danish dish called suerkohl (sp) kind of a mild saurkraut with a Beschemel type sauce. Creamed tiny onions was another.

Mom used Bell Seasoning for the Stuffing and added well drained frozen chopped spinach to the onions and celery that was sauteed for the stuffing.

Warden, that looks slightly bizarre, a little grotesque, and totally delicious. Very cool. But what exactly do you call sausage meat over there? We have two basic types, breakfast sausage, which is very sagey, and Italian sausage, which has . . . other seasonings (no idea, actually). What does your sausage meat consist of?
