As far as I can determine Aero's designated very heavy chrome tanned steerhide is the real deal if one wants to wear mail armor. I'm still unsure whether Aero's blue and green labeled jackets listed as steerhide but labeled as cowhide on the inside are steer or cow. Also, the original question "Is steer superior to cow if tanned/processed the same way?" is still unanswered. Lotsa bull though in between the lines.

I just saw this information on Aero's website that might at least partially answer the question (s). Basically, it is all about the tanning process.
