I've had to literally roll the back up (like rolling a sheet of paper) by hand in order to get the back of a western brim to curve upward. That thick, stiff felt can take it.

I think you're uncomfortable with a taller crown because you haven't worn one. This happens to most people the firts time they wear a hat with a tall crown. Once you've worn one and are comfortable with it, a shorter crown just doesn't look as good. At least that is my experience...
