First and foremost, the bartenders must be extremely well versed in the art of making a proper drink. All of the right seating and decor means nothing, if your drink is sub-par.

The modern 90 proof Herbsaint is not too bad, it's generally looked upon more as a mixing ingredient, and the 100 proof vintage repro Herbsaint Original is a better stand alone drink. (Herbsaint Original is quite nice in a Sazerac too)

The 90 proof Herbsaint is less complex than J.M. Legendre's original version, and is more forward in the use of star anise.
I've gone through a couple of bottles of the new Herbsaint Original myself.;)
What brand, and year range could help.
You may be able to drop in a generic turntable/record changer from the same era in the old cabinet, look for a donor turntable from the usual places.
