I have a lot of hair and it takes me about 45 mins. I use velcro rollers on top and pincurl the rest. I use the method Lollipop describes, being careful not to twist the hair as i wind it around my finger. My set isn't very exacting but I get a result I'm happy with :)

My first decent set in a long while - I've been wearing it up every day for ages as it's down to my shoulders now and I struggle to get good curls when it's this long. I think I probably should have brushed the back for a little longer as it still looks quite fluffy.
I'd suggest a smooth low chignon or bun. You could also try a horizontal back roll if your hair will hold it - as it's long I realise I may be too heavy and/or bulky. Whatever you do, keep it simple and let the hat take the style-strain!
