I can't fault any of the three versions other than nitpicking on my personal preferences. I'd take the color of number 2 With the more minimalist sleeves of number 3. Now to convince myself I can pull of that look:D:D
The Blizzard looks like a really nice design. Getting rid of the double breast must also remove a bit of bulk I guess. Yours seem like a nice allround length, around what I see in my head.

Lol! I can picture it :D I really think I need a similar length for it to be a viable option with the weather we get here. The Stockman looks like a nice simple design and it seems like you can get some windprotection by popping that collar as well.
I can see that. I guess if they are really high they can be quite restrictive due to the thick leather as well, so I guess the allow for that in the design.
I really like the simplicity of the B6, but I feel I might need something longer in the body and the B6 looks best a bit shorter like this fit from @MeachamLake which looks belt length.

Yeah. I think I'll probably need to default to my Fjallraven down jacket for the coldest days anyway, so I was considering a heavy duty padded quilting with a detachable fur collar for that extra comfort

I'm usually not too fussy about grain matching on panels, but I guess the color will be pretty hard to emulate on a used jacket as the burgundy usually darkens really fast if you choose to swap out the damaged panel. But I'm sure they'll do a good job and you will have a story to tell :)
I've had this happen too many times to mention. I bought and sold watches internationally on a regular basis and they'd show up with cuts and bang marks in the leather and wooden boxes. I'm always weary of this when buying clothing.
