I think part of it is the patterning and the shape of the back and shoulders. I think some jackets sit differently and curve around or don't curve around someone's upper back and shoulders differently. This makes them longer or shorter in effect than the basic measurements suggest.

Thanks! Yes, you can feel it if you wear a short sleeve shirt, but even in that case it's still wearable for me. A thin chambray allows it to poke through a bit even in the back, but I don't mind it much.

That's interesting because I have big thighs and a slim waist and tapered jeans make me look fat. Wider legs with a higher rise actually show off a slim waist better in my experience.
