When I was a kid in the UK, my parents used to make ginger beer and it was fantastic. They had a big old jar with ginger root, yeast and water - lots of fermenting going on.
I'm thinking of trying myself, I found this "How To"
Because the fermentation is very fast, there is a lot of CO2 produced (we want our ginger beer to be nice and fizzy) but not much alcohol - less than 1% ABV. If I remember correctly, anything less than 2% alcohol has classed as a soft drink.
So far, I'm still looking for the perfect commercially made soft drink.
