Started off with several absinthes and finished the evening with several Jameson's.

That sounds like the reverse of how most would have done it. I have only had absinthe on two occasions and each time, I really liked it.
A few REAL Mai Tais and a few beers.
Don't really need an excuse. In Injia sunny clime gin was originally mixed with quinine tonic to make it more palatable.
