I've looked into fabrics for jackets, but haven't checked out fabrics for shirts. Where should I start? Any pointers? Good suppliers? I'm UK-based.

You really need a trip up to Berwick St. on a Saturday morning.
Cloth House is a good'un and huge.
Have a gander about and visit Button Queen(No- it's not on Old Compton St.), while yer in Town.

Nothing like perusing.

Berwick St is go. Also, I've been told Walthamstow market is good for all sorts of fabric.
