Hello,
I would like to buy one but as I know nothing about this tool I would like some advises.
There are plenty of hat-stretchers on ebay but which are the good ones?
Do I have only to take care of the sizes ?

No problem at all! There are many posts I've almost made and then realized that there were many already made in the archives with all of the answers I've needed. Think of the search function as a card catalogue search engine for a hat library.
