I remember a morning after a nice party, wanted to make a Müsli but the milk was out. Used a nice splash of Brandy instead, worked out nicely.

Imitation crab meat chunks, canned sardines, chickpeas, radishes, olives, red onion, yellow squash......wok tossed in the oil from the sardine can. Stir fry? Chop suey? I call it Chinese food. I'm Chinese. I made the food. Everything I cook is Chinese food. Even if it's just leftover scraps in the fridge that I'm too cheap to throw away.

Always interesting to see into the refrigerator of different people. Some food that I may eat regularly, may be abstract and not a part of the next person's daily consumption.

In a meat & potato world, I don't eat very many potato. I eat plenty of meat. I'll eat fries and baked potato at restaurants. I know how to cook potato. But potato is not an instant food. It takes time to wash, cut, and soak out the starch. Potato in an oven take up to an hour. I'm not filling up a pot with oil, just to make french fries, as I have little interest in deep frying anything else. At home, when I cook a steak, it's eaten with a salad. Much less work & time. I'm just lazy when it comes to potato. Odd, because those grow wild in my yard. I've always been able to go out back, and harvest potato as I want it. I don't do a thing to intentionally grow potato. Any potato I don't harvest stays in the ground, and eventually becomes the seed potato for the next plant. Sometimes I want to turn the soil to actually plant something, I come up with a bunch of potato that have just been sitting under the dirt, waiting for someone to eat them.

I have a friend from The Deep South. Where almost any food can be battered, deep fried, smothered in country gravy, and topped with Cheez Whiz. The food bank giveaway last week had chickpeas. Dried. In a bag. Apparently, in the back woods of "Lower Alabama" where she's from, it wasn't a part of her diet. So I soaked them and simmered them until soft. In a food processor: chickpea, sesame seed, garlic, lemon juice, olive oil, salt, and pepper. Then served in a bowl, topped with paprika.

I didn't have a pita handy. So I mixed some flour and water, and made an improvised flat bread on the griddle. Something that a lot of people call a handmade tortilla.

"What is that?"

Chinese food. I'm Chinese. I made it. It's Chinese food. Apparently, in the back woods of "Lower Alabama", they've never heard of hummus. They ain't got no Aye-Rabs.
