Chicken Salad

When I was last in the States I got a chicken salad baguette from some place and I have to say it was amazing.

Ever since I've been after a really good recipe for making chicken salad but haven't found one that comes close to that filled baguette.

So I was wondering whether any Loungers here have a really superlative recipe for this brilliant sandwich filling.

Any help/tips would be hugely appreciated!

This post will be of no help whatsoever but you've gotten my salivary glands on the run now...when I lived in the States I used to get a vegetarian chicken salad at our local health food store which was out of this world...I've been really food-weary over the past few days (the heat, I think), so any posted recipes to follow may be getting a veggie make-over for my dinner! Thank you!

Can't say I've tried the vegetarian version but if it's an anything like the version with real chook it's bloody brilliant.

I've fiddled around with a couple of recipes off the net but nothing has come close to the version I had in the States. All I know is that there was celery, chives (and truth be told maybe more bits and bobs) and the most brilliant dressing.

Fingers crossed one of our American mates here can help!

can you tell us what the dressing tasted of? Most of them are mayo based...but without knowing if it tasted mustardy, tart, tangy, sweet, etc.....there would be a million variations..


Some descriptors besides 'brilliant'......would help ;)

Agreed. There are a lot of variations, and most of them are rather dubious goop.

I would love to try to figure out what this brilliant one was.

Hi Miss Neecerie,

It was tangy but not particularly sour. I've tried a couple of recipes off the net with mayo, etc, but they haven't come close.

The closest I can come to describing the dressing was tangy, creamy and slightly sweet, but the big thing was that the dressing tied in perfectly with the chicken, and buttered baguette.

I know there was celery and chives in the dressing but apart from that I'm a little lost. I've tried recreating with straight mayo, mayo and vinegar, a touch of honey even, but haven't come close.

Hopefully you guys can help!

I've done this for lobster salad and I can't see why it wouldn't work for chicken salad. Fair warning though, it will be a bit thin in the sauce, so I make the salad let sit, then serve on bread from a slotted spoon immediately before serving.

Some heavy coconut milk (not sweetened), a squeeze of lime, 1/2 teaspoon of minced fresh cilantro, 1/4 lime zest, a dash of rice wine vinegar, S&P - add mayo just to thicken and then add to your cubed chicken.

I'd be a bit more generous with the mixture when using chicken, as opposed to lobster, because the chicken would pick up more moisture. I'd also line the sandwich with sliced cucumber rather than lettuce.

Sounds to me like a classic case of Miracle Whip. It's got a different flavor than mayo, especially when you mention slightly sweet. I personally am not the #1 fan of Miracle Whip, but with July 4th coming up here in the 'States, I'm bound to ingest some with all the cole slaws, potato salads, devilled eggs, and whatnot, that are the staples of most parties help to commemorate the momentous date. (why exactly we consume this kind of fare for my nations' birthday is another topic altogether :p )

Thanks all, I really appreciate the help and suggestions.

Puzzicato, that stuff sounds top notch and mrdaddy, I've never had this Miracle Whip (not even sure if it's Down Under) but I'll have a shufti in the supermarket for it.

This sounds like it's going to be rather fun, trying all these different things, much like my endless search for making the perfect curry which is another constant task (albeit a very enjoyable one) ;)
