Size variation is just a normal element of the hat-wearing game. But better to be a little big than a little small. You can shim something under the sweatband of a big hat, but a small hat isn't such an easy fix. I pass up many hats because most 7 3/8 are too small on me, yet most 7 1/2 hats...
Akubras are great hats, especially the Campdraft. But their lids tend to be bigger and meatier than Stetsons.
In your case, I would suggest looking at other Stetsons. Stetsons with a c-crown or tear drop crown tend to have straight but low crowns, which would be less of a jump from a boonie...
For the most part, a fur felt hat can survive getting wet just fine, as long as you let it air-dry slowly. If it's really soaked, throw a hat stretcher in it while it dries to prevent shrinking. Some people like to treat their lids with a spray, but I have found no need for it.
Steam can reactivate the stiffener in the hat, while water tends to soften a hat. However, water does make the hat more likely to keep the shape it's given.
One word of advice about water, though. Tap water can have all sorts of chemicals and minerals that could discolor the felt. Always...

Thanks, Feraud. The sweat is some sort of ribbon, actually. Also, the bill is soft enough to roll, but stiff enough to hold it's shape. The hat is perfect for stuffing in a pocket or bag. And there is an elastic band sewn under the ribbon sweatband that is accessible at the back for size...
