there's an elastic band that runs across the mid back. You can feel it through the liner. If it's limp, it needs a new one. Any seamstress can pull this off very easily and without causing harm. Small cut in the liner, take out the old one, stitch in the new one. Probably $20-30 tops.

Unless I'm mistaken, the zipper is something he could sew on at the very end. I get why you wouldn't want to precondition leather before constructing since there is waste when making the jacket. So the zipper could be sewn on after the treatment. It's worth asking him about it.
