Having seen this image on a larger screen, I can see that it's very different from the panels on both the Journeyman and the Brakeman. Very neat detail.

Very subjective topic, but I agree. I have OD thread on Tatanka Brown HH, which I really like, dark tan on Auburn Brown HH; I’m about to receive tobacco Brown thread on mid brown goatskin.
Personally, I prefer subtle, complementary thread colours rather than stark contrast.
For the style that you describe, I’d go for a Freewheelers Four Corners (http://freewheelers.co.jp/blog/archives/16183).
Depending on your size, you can pick up smaller (38/40) sizes on Japanese auction sites for a reduction in price over the retail outlets.
From your list though, I’d opt for Thedi.
I’ve owned examples of Perry A-2 (collar stand) and Doniger (without). The collar sits more prominently with the band, but for comfort I preferred the more open collar with the simple neckline of the Doniger.
