l don't like toe taps either, it's a HUGE risk when applying them. lf the nail goes into the little holes where the lock stitch is formed the integrity of the construction will be compromised because the lock will be broken, stitching can start to undo. l wouldn't trust a cobbler to put on taps...
People who use machines v's hands for recrafting have different philosophies in my experience. People who use machines pay less attention to detail and tend to be more slap happy than craftsmen specialising in hand repairs. The priorities of workers who use machines is SPEED, not premium work...
No insole replacement in that video. They take the sole off, renew the cork, stitch on a new sole and repaint the shoos. Easy to resole, just how goodyear should be.
That wouldn't make sence to do that. That means a complete rebuild. The factories would most likely just stitch another outsole on, even a slip sole if neccessary. Replacing the insole wouldn't be neccessary for many recrafts.

lt could be done, but it's success would depend on many factors.
1). The upper shape (last) would need to be suitable to the spade sole so the aesthetic is correct , most lasts aren't suitable for spade soles because the proper balance wouldn't be there.
2). l think it highly unlikely...
No need to worry about re-heeling. When the heel wears down to the first layer, then get a new heel build up. This method won't negatively effect the structure of the shoo.
Upper would be nailed to the heel in that area.

These old Crosby spade shoos are AMAZING!!! Double machine stitched soles, hand welted and hand lasted, and even the sole at the waist is stitched by hand. Some of the best constructed shoos you will ever see, better construction than many of the upper end shoos.

l'm doing a write up on my city's local shoo shine man in a couple of weeks. l'll post it here a few weeks. l'll even post a pic of a local aussie shoo that was hand made in 1902.
l think the shoos are o.k, but the tie is not blending with the shirt. l'm not sure what tie would work, it's just a case of trying different colours/patterns and see what works.
