The mods mentioned aren't so extreme to change the pattern- adding/removing piping/epaulets/a yoke/a kidney padel, or changing zips. That's all just fiddling with details. Plus I'd never heard of Aero in 2012. :) If this forum has taught us anything about Aero it's that they're happy to work...
You never know until you ask. They've been receptive to design changes when I and others have asked for them, but some designs I hear they don't like to meddle with. But they do so many variations of the classic motorcycle crosszip I don't see why they're mind a customer mixing and matching...

My uncles frequently went game shooting when I was growing up, but I don't recall them (or anyone else) from stuffing their kill in their pockets. The use case you describe makes infinitely more sense than storing a bloodied dead animal inside your woolen coat. Haha!

It looks a million times better in that photo than any other! For anyone owns it, never ever do it up because this way works. It could do with a belt or cinch, though, as even in that picture the hem is far too large, giving the jacket something of an upside down V shape.
Having just read through this thread, I'm left wondering what it is that sometimes makes the area surrounding chest pockets show through so prominently? Is the stitching done under too much pressure? Is it because the leather used to construct the pocket isn't skived?
