I had a Aero Hercules with the chest pocket deleted. It looked fine, although it had chest piping on it, much like the LVC that @l0fielectronic posted.
@zebedee I think that your jacket will be fine. This isn't a half-belt, but looks good without chest pockets.

Unsanforized jeans will generally shrink an inch or two in the waist when they're soaked or washed. However, they'll stretch out again with wear.

@Fonzie since you're in Adelaide, I'd suggest dropping by Right Hand Distribution. They carry Iron Heart, Samurai, Sugar Cane, and Mister Freedom. OK, they're not cheap brands, but it'll be a good place to start.

Since we're talking about retro riding gear, here's the Eversholt jacket by Ashley Watson. It's waxed cotton, with a Dyneema liner for abrasion resistance, a waterproof / breathable drop liner, and a complement of D3O armour.
