Perhaps @Daniele Tanto can clarify, but according to Google translate "paglia" is the word for straw as opposed to a type of straw like 'wheat straw.'
Paper 'straws' are not uncommon. The most common form is "Shangtung," which is a plastic or shellac coated paper straw.

The modern Stetson westerns are not the most common around here. Just going off the specs, the Range is taller and wider, with a modern cowboy brim.
If you were going to get a current Open Road, I'd opt for the Royal Deluxe over the 6x, but that's just me.
Optimo is much more expensive than NW hats. While an in-person fitting, especially with folks like Optimo is always best, as the dimensions can be tweaked to suit you. Though you have a specific idea in mind, it's probably not a bad idea to save the cash and stick with Mike.
