From my understanding and this is from a guy who only has 1 jacket lol, the seam seems to help, pun intended.
It'll allow the leather to fold inwards to the spine according to the natural contours of the back. When I stretch back to yawn, I can feel the center of the jacket folding to the back...

The center seam helps to reduce the back bulge as the leather has no where to go and can puff up when you straighten your back, this is especially true if you ride often and the back is molded to that rounded shape, so when you straighten up the back will pop out and look like a bad bulge.
