If you look at the original picture of the shirt, it's unlined. The outside has been sprayed a more uniform colour, which I think will wear off over time, whilst the inside is the back of the black and red leather strips it's sewn from.
I'd have it as a single layer, and just allow the inside...
There's a genre of reversible leather shirts from the seventies. Since the Electric Leather piece is unlined, it might be possible to add double sided snaps, make a few changes to the collar and sleeve seams, and be able to wear it both sides out.

I believe that he's getting in several shades of brown, along with bone, which Sam confirmed is a natural / undyed hide. I didn't ask about other shades of brown.

Indigofera often produce iterations of the Fargo in leather. This is the latest in a rough-out cowhide, via Pancho and Lefty. Other colours are available.
I'm not sure when a shirt becomes a jacket, but I think that this Fargo is on the dividing line.
Field Leathers have posted a cloth prototype of a Peter's Tailor Made jacket to their Instagram Stories.
There are photos of an original on the Freewheelers website. I prefer the prototype because it's cleaner, though I'm sure that Greg could build a stripped down version.
