about a fist gap, if the jacket has inner pocket or there is something on your shirt's pocket you need to reach it should be possible to slide in your hand and making a fist grabbing the item out with the jacket half zipped, in number I think about 10 cm (4") more from my chest size.
fit is really subjective, I see the jacket fits cool, perhaps the shoulder can be wider a bit, and the the waist tapered a bit, but if a jacket fits cool on the mirror I could care less about a bit bigger here and there as long as it zips
How do leather trousers works? do you wear them over leggings or longjohn kind of underpants? I wash my jeans occasionally like once or twice a year but I can't imagine a pair of pants I can't never wash for years
I think sneaker sole repair glue is another type of adhesive that could withstand velcro action (intentional pulling action) and maintain flexibility. the overnite araldite 2 components epoxy that stay flexible is also another alternative, but yeah they are all permanent and may make stronger...

your patched one looks cool, if the patch is just something the manufacturer put on and won't get you trouble wearing it, I think I prefer the patched version based on look alone, I think velcro would make it look tacky, I've yet to see velcro+leather that looks good together outside of perf...
I've been wearing this repro field jacket everyday, I hope to get back to leather and denim way again someday, but this light cotton coat with 4 cargo pockets in what currently summer climate feels really ideal, and I have a goal to fade it or something before rainy season kicks in.
sheep despite being thin and light weight is actually warmer than cow perhaps because of their smaller pores or whatever based on leather shell alone. based on sheep leather gloves I have and cow leather gloves I have in the past.
hand sewing a velcro tab back on is very easy just like sew on a patch, there is even velcro with stick on adhesive on its back already pre cut in small oval patches ready to use. I think you can use poster tack putty (or chewing gum if you must) to lift off stuff clogging the hooks
