Hats went out of style with the baby boomers right when the "don't trust anyone over thirty" concept came into view. Hats were a quick indicator that you were "old" so they went out.
Jeans go with pretty much everything so they get excluded from the color palette.
With the clothes you describe, I'd go with brown. Just avoid wearing a brown leather jacket and carrying a whip when you're wearing the hat. :)
I think it all depends on what you wear. If you wear a lot of earth tones (browns, greens) go with a brown hat. If you wear more blue/blacks, go with a grey hat.
The color looks real close to Akubra's Moonstone color so I'm going to echo what Aureliano said, grey goes with almost anything. Personally I think that color grey goes best with a black overcoat, but it goes just as well with blue clothes too.
I think in Egypt you're going to want a hat with a mesh top, maybe like a Tilley LTM8. Egypt is going to be so rediculously hot that anything on your head is going to feel hot eventually. You might also consider some form of a panama, rain generally isn't a problem in Egypt. :)
