I agree with @Aloysius - rather wear and enjoy this jacket for at least a year, only then consider other options like SB. Dealing with them is rather sketchy for sure even if you completely ignore their history with Aero.
I do comfortably wear it with a thick wool sweater as well by the way. But mobility reaching forward is meh no matter how little I layer.

Yes, but it might be counter-intuitive - lower / larger armholes actually restrict movement more rather than improving it. In my opinion high armhole jackets are objectively better as long as you don't go too high to start pinching and pushing up your armpit.
If you're not planning to wear your jacket more than 1/2 zipped up then sure - ignore the chest measurements. Cross-zips are more forgiving in terms of 2/3, but for a straight zip even 2/3 starts to become really problematic if chest space is lacking. Personally I think that if you're jacket...
Nice first post! And I think you've done well to set your targets on the Hooch Hauler. It's definitely still my favorite model from Aero, followed by the J-106 and Maxwell/Moonshiner.

I disagree with this. Especially if we talk about the top block. Room in the back provides freedom of movement reaching forward. Room in the front is responsible for movement in terms of pulling your shoulders or arms backward. That's why I'm such a fervent advocate for measuring chest width...
A set of 1 main zip (#8) + 3 secondary (#6) was about 40 gbp in UK. I'm sure you can buy from UK and ship to FL directly or they can buy these for you. Not that rare in UK as far as I can tell.
My advice is to be very careful and demanding in terms of pre-shipping QC (especially in terms of sizing / measurements) with SB. I've had great experience with them in terms of communication, but awful in terms of delivery. A lot of headache would have been avoided if I had been more demanding...
