I think most people have chimed in about the jacket size - so won't add anything there myself.
Looking at some of the pics, you look to have some spinal curvature:
Especially with tighter fitting jackets, it doesn't help as your posture kinda pushes your midsection outwards giving the...
If you read their store policy, you'll see why that is tricky:
It's tough to argue that the jacket is "defective" because of this issue. It's not like they screwed up the back - just incompatibility with the OP's neutral posture. Not saying he shouldn't try, but seems unlikely Thurston will...
My friend, you're working yourself into a frenzy by the looks of it.
I believe OP has explored all avenues at this point - looks like returning this jacket is not feasible.

The canvas is...
Got the Heavy Canvas/Denim Lined version of the LW J23 today. This thing is a beast in its own right - weighs just as much as some leather jackets I have.
It sounds like he's asking you to "add" a yoke that you see on the backs of a lot of jackets.
If you go back upto my previous pic, it's that horizontal seam that runs across my upper back which helps add some curvature.
I believe you have the idea.
Honestly I think the best approach is...
